DICE PORK WITH PEAS AND POTATOES 
Diced pork
Peas & juice
Potatoes
Onions
Olive oil
Salt & pepper

Heat olive oil with cover on. Fry onions with cover on. Add diced pork with cover on then after pork is 1/2 cooked, add peas and juice, still with cover on. Add diced potatoes. (Keep cover on at all times.)

This was very good! My husband and I both enjoyed it and it was a perfect way to use up some leftover pork roast. The only thing I did differently was toward the end, I made a light roux to thicken it slightly.
