APPLE GINGERBREAD UPSIDE-DOWN
CAKE
 
1/2 cup shortening (I use lard)
1/2 cup boiling water
1 cup molasses
2 cups all-purpose flour
1 tsp. ginger
3/4 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. salt
4 or 5 apples, peeled and sliced
2 tsp. cinnamon mixed with 1/3 cup sugar

Preheat oven to 350°F.

Melt shortening in boiling water. Add molasses. Sift flour, ginger, baking soda, cinnamon and salt together and add to the first mixture. Beat vigorously.

Arrange the sliced apples, sugar and cinnamon in a buttered baking dish. Pour the gingerbread mixture over apples and bake at 350°F. for about 45 minutes.

Turn the gingerbread out carefully, upside-down. Serve hot with whipped cream or your favorite ice cream.
